In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, ginger (if using), and black pepper.
Place the salmon pieces in a resealable plastic bag or a shallow dish and pour the marinade over the salmon. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Remove the salmon from the marinade, allowing excess marinade to drip off. Place the salmon bites on the prepared baking sheet in a single layer.
Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
While the salmon is baking, pour the remaining marinade into a small saucepan and bring to a boil over medium heat. Reduce heat and simmer for about 5 minutes until slightly thickened.
Drizzle the thickened sauce over the baked salmon bites and garnish with sesame seeds and sliced green onions before serving.
