  • 2 pounds bone-in skin-on chicken thighs
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, dried thyme, paprika, salt, and pepper until well combined.
  3. Place the chicken thighs in a large baking dish and pour the honey Dijon mixture over the chicken, making sure to coat each piece evenly.
  4. Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.
  5. If desired, broil for an additional 2-3 minutes to crisp up the skin.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
