Place the chicken thighs in a large baking dish and pour the honey Dijon mixture over the chicken, making sure to coat each piece evenly.
Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.
If desired, broil for an additional 2-3 minutes to crisp up the skin.
Remove from the oven and let the chicken rest for 5 minutes before serving. Garnish with fresh parsley if desired.
