- In a medium bowl, combine butter, olive oil, garlic, lemon zest and juice, rosemary, thyme, and parsley. Season with salt and pepper.
- Loosen the skin of the chicken and rub the herb mixture generously under the skin and all over the chicken.
- Allow to marinate for at least 30 minutes or up to 2 hours.
- Preheat your oven to 375°F (190°C).
- Peel and chop the vegetables, toss with olive oil, salt, and pepper, and arrange in a roasting pan.
- Place the marinated chicken breast side up on the vegetables and roast for approximately 1 hour and 20 minutes, basting halfway through.
- Check the internal temperature to reach 165°F (75°C).
- Let the chicken rest for 10-15 minutes before carving.
