Method
 

Preparation Steps
  1. In a medium bowl, combine butter, olive oil, garlic, lemon zest and juice, rosemary, thyme, and parsley. Season with salt and pepper.
  2. Loosen the skin of the chicken and rub the herb mixture generously under the skin and all over the chicken.
  3. Allow to marinate for at least 30 minutes or up to 2 hours.
  4. Preheat your oven to 375°F (190°C).
  5. Peel and chop the vegetables, toss with olive oil, salt, and pepper, and arrange in a roasting pan.
  6. Place the marinated chicken breast side up on the vegetables and roast for approximately 1 hour and 20 minutes, basting halfway through.
  7. Check the internal temperature to reach 165°F (75°C).
  8. Let the chicken rest for 10-15 minutes before carving.
