Ingredients
  

  • 8 ounces whole wheat pasta fusilli or penne
  • 1 large cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 bell pepper any color, diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 1/4 cup feta cheese crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, combine the diced cucumber, cherry tomatoes, bell pepper, red onion, parsley, and feta cheese if using.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper until well combined.
  4. Add the cooled pasta to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients evenly.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld before serving.
