Ingredients
  

  • 1 pound ground turkey
  • 2 medium zucchinis diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced (any color)
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and bell pepper, and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground turkey. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes.
  4. Stir in the diced zucchini, oregano, paprika, salt, and black pepper. Cook for another 5-6 minutes until the zucchini is tender.
  5. Pour in the chicken broth and stir to combine. If using, sprinkle the mozzarella cheese on top and cover the skillet for 2-3 minutes until the cheese is melted.
  6. Remove from heat and garnish with fresh parsley before serving.
