  • 1 lb Ground Beef can substitute with ground turkey, chicken, or lentils
  • 1 Onion use yellow or white for best flavor
  • 2 cloves Garlic fresh recommended
  • 1 tbsp Cumin adjust based on taste
  • 1 tbsp Chili Powder increase for spicier kick
For Assembling
  • 8 Tortillas lightly fry if using corn
  • 2 cups Enchilada Sauce homemade or store-bought
  • 2 cups Shredded Cheese cheddar, Monterey Jack, or blend

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add ground beef and diced onions. Cook for about 5-7 minutes until fully cooked.
  3. Stir in minced garlic, cumin, and chili powder, cooking for an additional minute.
  4. Assemble the enchiladas by spooning the beef mixture onto tortillas, rolling tightly, and placing seam-side down in a greased baking dish.
  5. Pour enchilada sauce over the top and sprinkle with cheese.
  6. Bake in the oven for 20-25 minutes until cheese is bubbly and golden.

Notes
