  • 1 medium head garlic Roasted for sweetness

  • 2 tablespoons olive oil For roasting and sautéing
  • 1 cup ricotta cheese Substitute with mascarpone or cottage cheese
  • 2 cups mozzarella cheese Divided into two portions
  • 1/2 cup feta cheese Crumbled for topping
  • 1/4 cup grated Parmesan cheese
Seasonings and Garnish
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes Optional for heat
  • 1/4 cup fresh basil leaves For garnish

Method
 

Roasting and Preparation
  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Heat olive oil in a skillet, add spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper.
  3. Mash roasted garlic and combine it with ricotta, half the mozzarella, oregano, salt, and pepper until smooth.
  4. Roll out pizza crust, spread garlic-ricotta mixture, layer sautéed spinach, and top with remaining mozzarella and feta.
  5. Bake in the oven for 15-20 minutes until crust is golden and cheese is bubbly.
  6. Let the pizza cool for a few minutes, garnish with basil, and serve.
