Roasting and Preparation
- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Heat olive oil in a skillet, add spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper.
- Mash roasted garlic and combine it with ricotta, half the mozzarella, oregano, salt, and pepper until smooth.
- Roll out pizza crust, spread garlic-ricotta mixture, layer sautéed spinach, and top with remaining mozzarella and feta.
- Bake in the oven for 15-20 minutes until crust is golden and cheese is bubbly.
- Let the pizza cool for a few minutes, garnish with basil, and serve.
