Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled cored, and chopped apples (about 2 medium apples)
  • ½ cup chopped walnuts or pecans optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  3. In a large bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.
  4. Add the eggs and vanilla extract to the sugar mixture, and beat until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chopped apples and nuts (if using) until evenly distributed.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
