- Wash and halve the baby potatoes, then toss with melted butter, half of the minced garlic, salt, pepper, and half of the Parmesan cheese.
- Spray the crockpot with non-stick cooking spray and layer the potatoes, cut-side down. Pour in chicken broth.
- Pat chicken dry, and mix melted butter, remaining minced garlic, olive oil, lemon juice, Italian seasoning, salt, and pepper. Brush over chicken.
- Place seasoned chicken on top of potatoes in the crockpot, and pour leftover garlic mixture over chicken. Sprinkle remaining Parmesan cheese.
- Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours until the chicken reaches 165°F and potatoes are tender.
- Serve the chicken and potatoes, garnished with fresh parsley if desired.
