  • 4 pieces Chicken Breasts Fresh is best
  • 4 tablespoons Butter Melted
  • 4 cloves Garlic Minced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Pepper Adjust to taste
For the Potatoes
  • 1.5 pounds Baby Potatoes Washed and halved
  • 1 cup Chicken Broth
For the Topping
  • 1 cup Parmesan Cheese Freshly grated

Method
 

Step-by-Step Instructions
  1. Wash and halve the baby potatoes, then toss with melted butter, half of the minced garlic, salt, pepper, and half of the Parmesan cheese.
  2. Spray the crockpot with non-stick cooking spray and layer the potatoes, cut-side down. Pour in chicken broth.
  3. Pat chicken dry, and mix melted butter, remaining minced garlic, olive oil, lemon juice, Italian seasoning, salt, and pepper. Brush over chicken.
  4. Place seasoned chicken on top of potatoes in the crockpot, and pour leftover garlic mixture over chicken. Sprinkle remaining Parmesan cheese.
  5. Cover and cook on LOW for 5-6 hours or HIGH for 3-4 hours until the chicken reaches 165°F and potatoes are tender.
  6. Serve the chicken and potatoes, garnished with fresh parsley if desired.
