  • 1 pound ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/4 cup finely chopped fresh parsley
  • 1/4 cup minced onion
  • 3 cloves garlic minced
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • 1/2 cup marinara sauce for topping

Method
 

  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, milk, parsley, onion, garlic, egg, salt, black pepper, Italian seasoning, and red pepper flakes. Mix until all ingredients are well combined.
  3. Transfer the mixture to a loaf pan and shape it into a loaf.
  4. Spread the marinara sauce evenly over the top of the meatloaf.
  5. Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F.
  6. Let the meatloaf rest for 10 minutes before slicing.
  7. Serve warm with your favorite sides, such as mashed potatoes or steamed vegetables.
