For Garnishing
  • 2 tablespoons Fresh Parsley, chopped Can substitute with chives.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby Yukon Gold potatoes thoroughly under cold water. Dry completely and cut them in half.
  3. In a large mixing bowl, combine the halved potatoes with olive oil, minced garlic, chopped rosemary, and thyme. Add salt and black pepper, and toss until evenly coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet, avoiding overcrowding.
  5. Roast the potatoes in the preheated oven for 25–30 minutes, turning halfway through for even browning.
  6. Remove from the oven, let cool for a few minutes, then transfer to a serving dish and sprinkle with fresh parsley.
