Method
 

Step-by-Step Instructions
  1. Wash the zucchini thoroughly and slice them into thick rounds or half-moons, about 1 inch thick. Set aside.
  2. Melt the unsalted butter in a small saucepan over low heat. Add minced garlic and simmer for 2-3 minutes until fragrant. Do not burn.
  3. In a mixing bowl, toss zucchini slices with olive oil, a pinch of salt, and black pepper. Pour garlic butter mixture over zucchini and stir well.
  4. Thread the seasoned zucchini pieces onto skewers, leaving space between pieces for even cooking.
  5. Preheat grill to medium-high heat (about 400°F). Allow grill grates to heat for around 10 minutes.
  6. Grill skewers for 8-10 minutes, turning occasionally until zucchini is tender and has grill marks.
  7. Remove from grill and drizzle with fresh lemon juice before serving.
