- Wash the zucchini thoroughly and slice them into thick rounds or half-moons, about 1 inch thick. Set aside.
- Melt the unsalted butter in a small saucepan over low heat. Add minced garlic and simmer for 2-3 minutes until fragrant. Do not burn.
- In a mixing bowl, toss zucchini slices with olive oil, a pinch of salt, and black pepper. Pour garlic butter mixture over zucchini and stir well.
- Thread the seasoned zucchini pieces onto skewers, leaving space between pieces for even cooking.
- Preheat grill to medium-high heat (about 400°F). Allow grill grates to heat for around 10 minutes.
- Grill skewers for 8-10 minutes, turning occasionally until zucchini is tender and has grill marks.
