Ingredients
  

  • 1 pound lamb chops about 4-6 chops
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 2 teaspoons fresh rosemary chopped (or 1 teaspoon dried)
  • 2 teaspoons fresh thyme chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon lemon juice
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, black pepper, and lemon juice to create a marinade.
  2. Place the lamb chops in a large resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
  3. Preheat your grill or stovetop grill pan over medium-high heat. Remove the lamb chops from the marinade and let excess marinade drip off.
  4. Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer to check for an internal temperature of 145°F for medium-rare.
  5. Once cooked, remove the lamb chops from the grill and let them rest for 5 minutes. Garnish with chopped parsley before serving.
