In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until well combined.
In a separate bowl, beat the eggs and then add the milk and vanilla extract. Mix until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should be thick but pourable.
In a deep skillet or pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F.
Using a small cookie scoop or spoon, drop tablespoon-sized amounts of batter into the hot oil. Fry in batches, being careful not to overcrowd the pan.
Fry the bites for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove them and drain on paper towels.
Once all the bites are fried, dust generously with powdered sugar before serving.
