Ingredients
  

  • 1 cup Greek yogurt plain or vanilla
  • 1/2 cup creamy peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips optional
  • 1/4 cup crushed nuts optional

Method
 

  1. In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
  2. If desired, fold in the mini chocolate chips and crushed nuts for added texture and flavor.
  3. Line a baking sheet with parchment paper. Using a spoon or a small cookie scoop, drop tablespoon-sized portions of the mixture onto the prepared baking sheet.
  4. Place the baking sheet in the freezer and freeze for about 2-3 hours, or until the bites are firm.
  5. Once frozen, transfer the bites to an airtight container or a zip-top bag for easy storage. Keep them in the freezer until ready to enjoy.
