- In a mixing bowl, blend together 1 cup of plain Greek yogurt, ½ cup of creamy peanut butter, 2 tablespoons of honey, and 1 teaspoon of vanilla extract using a spatula or wooden spoon. Stir until smooth.
- Gently fold in ½ cup of mini chocolate chips into the yogurt-peanut butter mixture, then prepare a baking sheet lined with parchment paper.
- Drop tablespoon-sized portions of the mixture onto the baking sheet, spaced about an inch apart. Sprinkle extra mini chocolate chips on top if desired.
- Allow the bites to freeze for at least 2 hours or until firm. They should feel solid yet creamy.
- While freezing, melt ½ cup of dark chocolate chips in a microwave-safe bowl, stirring until smooth. For a silky coat, mix in 1 teaspoon of coconut oil.
- Dip each frozen bite into the melted chocolate, then place back onto the parchment-lined baking sheet.
