  • 1/4 cup Chopped fresh cilantro Feel free to omit if you're not a fan, or substitute with parsley.
  • 1/4 cup Chopped peanuts Sunflower seeds can be used for nut-free wraps.

Method
 

Preparation
  1. In a medium bowl, whisk together creamy peanut butter, soy sauce, honey, rice vinegar, sesame oil, and minced garlic until smooth and silky, about 2-3 minutes.
  2. In a large mixing bowl, add shredded cooked chicken and pour half of the peanut sauce over it, tossing until thoroughly coated.
  3. Wash and dry the outer leaves of lettuce, laying 4-6 leaves flat on a clean cutting board.
  4. Spoon an even portion of the peanut-coated chicken onto the center of each lettuce leaf, adding shredded carrots, sliced bell peppers, and cilantro.
  5. Drizzle a little more peanut sauce over the chicken mixture in each wrap.
  6. Starting from the bottom, carefully roll each lettuce leaf around the filling, folding the sides inward to secure.
  7. Serve the finished wraps on a platter, seam side down, with extra peanut sauce on the side for dipping.
