Ingredients
  

  • 2 medium zucchinis sliced into sticks
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs preferably Italian seasoned
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Cooking spray or olive oil for drizzling

Method
 

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper and lightly spray with cooking spray or drizzle with olive oil.
  2. In a shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and paprika. Mix well.
  3. In another shallow bowl, beat the eggs until well combined.
  4. Dip each zucchini stick into the egg mixture, allowing excess to drip off, then coat with the breadcrumb mixture, pressing gently to adhere. Place the coated zucchini fries on the prepared baking sheet in a single layer.
  5. Lightly spray the tops of the zucchini fries with cooking spray or drizzle with olive oil.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  7. Remove from the oven and let cool for a few minutes before serving.
