  • 2 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup bourbon
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/2 teaspoon red pepper flakes optional
  • 2 green onions sliced (for garnish)
  • Cooked white rice for serving

Method
 

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  2. In a separate bowl, whisk together the soy sauce, brown sugar, bourbon, apple cider vinegar, garlic, ginger, and red pepper flakes.
  3. Pour the sauce over the browned chicken in the skillet. Stir to coat the chicken evenly.
  4. Reduce the heat to medium-low and let the chicken simmer in the sauce for about 15-20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.
  5. Serve the bourbon chicken over cooked white rice and garnish with sliced green onions.
