Ingredients
  

For the Shrimp
  • 1 lb Fresh Shrimp Thawed and deveined
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 1 tsp Salt
For the Mango Salsa
  • 1 cup Mango Diced, ripe
  • 1 cup Tomatoes Chopped
  • 1/4 cup Red Onion Finely diced
  • 1/4 cup Cilantro Chopped
  • 1 tbsp Lime Juice
For the Lime-Chili Sauce
  • 1/2 cup Greek Yogurt Or Mayo based on preference
  • 2 tbsp Lime Juice Fresh
  • 1 tbsp Chili Sauce Or Sriracha to taste
For Serving
  • 2 cups Cooked Rice Jasmine or brown rice
  • 1 Avocado Ripe Sliced

Method
 

Cooking Steps
  1. In a medium bowl, mix shrimp with olive oil, garlic powder, paprika, and salt. Let marinate for 15 minutes.
  2. In another bowl, combine mango, tomatoes, red onion, cilantro, and lime juice to make the salsa. Chill in refrigerator.
  3. Preheat grill to medium-high heat, grill shrimp for 2-3 minutes per side until pink and opaque. Set aside.
  4. Mix Greek yogurt, lime juice, and chili sauce in a small bowl. Adjust spice to taste.
  5. To assemble, layer rice in bowls, top with shrimp, avocado, mango salsa, and drizzle with lime-chili sauce. Serve immediately.
