- Combine pumpkin puree, egg, light brown sugar, oil, sour cream, and vanilla extract in a large mixing bowl. Whisk until smooth.
- In another bowl, whisk together all-purpose flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add to the wet ingredients.
- Mix softened cream cheese, granulated sugar, and flour in a small bowl until smooth.
- Layer half of the pumpkin batter, followed by spoonfuls of the cream cheese mixture, then top with remaining pumpkin batter and swirl.
