Ingredients
  

Peanut Sauce
  • ½ cup creamy peanut butter
  • 3 tablespoons soy sauce or gluten-free soy sauce
  • 2 tablespoons honey substitutable with agave syrup
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil toasted sesame oil preferred
  • 2 cloves minced garlic fresh is preferred
  • 1 teaspoon grated ginger
Wraps
  • 2 cups shredded cooked chicken ensure it's shredded
  • 8-10 leaves lettuce leaves (Romaine or Butter) collard greens or cabbage can replace
  • 1 cup shredded carrots sugar snap peas as alternative
  • 1 cup sliced bell peppers any variety
  • cup chopped fresh cilantro optional
  • cup chopped peanuts optional for crunch

Method
 

Peanut Sauce Preparation
  1. In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until smooth and creamy.
Chicken Filling Preparation
  1. In a large mixing bowl, combine the shredded chicken with half of the prepared peanut sauce, mixing until well-coated.
Wrap Assembly
  1. Lay out the lettuce leaves and spoon the chicken mixture onto each leaf.
Add Toppings
  1. Top each lettuce leaf with shredded carrots, sliced bell peppers, and cilantro.
Drizzle Sauce
  1. Drizzle more peanut sauce over the top if desired.
Wrap and Serve
  1. Fold the lettuce leaves over the filling and serve immediately.
