Ingredients
  

For the Fritters
  • 1 cup Sweet Corn Kernels fresh or frozen
  • 1 cup All-Purpose Flour gluten-free flour can be used
  • 1 large Egg or flax egg for vegan option
  • 1/2 cup Milk or any plant-based milk
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt to taste
  • 1/4 teaspoon Black Pepper to taste
  • 1/4 teaspoon Cayenne Pepper optional
  • 2 tablespoons Chopped Green Onions or chives
  • 1/2 cup Grated Cheddar Cheese dairy-free cheese for vegan
  • oil for Frying canola or vegetable oil recommended
For the Sandwich
  • 4 large Eggs cooked to preference
  • 4 slices Crispy Bacon or Sausage optional
  • 1 medium Sliced Avocado
  • 1 cup Fresh Arugula or spinach/rocket
  • to taste Hot Sauce optional

Method
 

Preparation
  1. In a large mixing bowl, combine sweet corn kernels, all-purpose flour, egg, milk, baking powder, salt, black pepper, and optional cayenne pepper. Stir in chopped green onions and grated cheddar cheese until just blended. Let it rest for about 5 minutes.
  2. Heat about ½ inch of oil in a skillet over medium heat, checking if it's hot enough by dropping in a small spoonful of batter. Spoon heaping tablespoons of batter into the skillet and flatten gently. Cook until golden brown and crisp, then flip and cook the other side. Drain on paper towels.
  3. Use the skillet to cook your eggs to your desired doneness. Set aside and keep warm.
  4. Assemble the sandwiches by taking one fritter, adding a cooked egg, optional bacon or sausage, a slice of avocado, and arugula. Top with another fritter.
  5. Serve warm with hot sauce if desired. Enjoy immediately!
