- In a large mixing bowl, combine sweet corn kernels, all-purpose flour, egg, milk, baking powder, salt, black pepper, and optional cayenne pepper. Stir in chopped green onions and grated cheddar cheese until just blended. Let it rest for about 5 minutes.
- Heat about ½ inch of oil in a skillet over medium heat, checking if it's hot enough by dropping in a small spoonful of batter. Spoon heaping tablespoons of batter into the skillet and flatten gently. Cook until golden brown and crisp, then flip and cook the other side. Drain on paper towels.
- Use the skillet to cook your eggs to your desired doneness. Set aside and keep warm.
- Assemble the sandwiches by taking one fritter, adding a cooked egg, optional bacon or sausage, a slice of avocado, and arugula. Top with another fritter.
- Serve warm with hot sauce if desired. Enjoy immediately!
