Ingredients
  

For the Casserole
  • 3 cups cooked chicken shredded or diced, leftover chicken works great
  • 1 cup artichoke hearts drained and chopped
  • 10 ounces frozen spinach well-drained
  • 1 cup sour cream can swap with Greek yogurt
  • 1/2 cup mayonnaise optional swap for Greek yogurt
  • 2 cups mozzarella cheese divided
  • 1/2 cup Parmesan cheese for topping
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper to taste
  • 1 teaspoon salt to taste
  • 1 tablespoon olive oil for greasing the dish
For the Crunchy Topping
  • 1 cup breadcrumbs can be gluten-free
  • 4 tablespoons butter melted

Method
 

Casserole Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients.
  2. In a large mixing bowl, combine the cooked chicken, chopped artichoke hearts, and well-drained frozen spinach. Mix well.
  3. Mix in sour cream, mayonnaise, mozzarella, Parmesan, garlic powder, onion powder, black pepper, and salt. Stir until creamy.
  4. Grease a 9x13-inch baking dish with olive oil.
  5. Spread the creamy chicken mixture evenly into the greased baking dish.
  6. In a separate bowl, combine breadcrumbs and melted butter. Sprinkle over casserole.
  7. Sprinkle remaining mozzarella and Parmesan cheese over breadcrumbs.
  8. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes until golden.
  9. Let cool for about 5-10 minutes before serving.
