  • 1 tablespoon Dijon Mustard Enhances flavor profile.
For the Seasoning
  • 1 bunch Chives Fresh, for mild onion flavor.
  • 2 teaspoons Thyme Fresh is recommended.
  • 1 teaspoon Nutmeg A pinch enhances warmth.
Optional Add-Ins
  • 1 cup Cooked Bacon or Mushrooms For added flavor.
  • Additional Herbs or Cheeses Based on personal preference.

Preparation and Cooking Steps
  1. Begin by cleaning and slicing the leeks; soak them to remove grit, using only the white and light green parts. In a skillet, melt butter and oil over medium heat, add leeks, salt, and pepper, and sauté until tender.
  2. Cut the bread into 1-inch cubes and toast in the oven at 350°F for about 20 minutes until golden brown.
  3. In a bowl, whisk together eggs, milk, half-and-half, and Dijon mustard until smooth. Season with salt, pepper, chives, thyme, and nutmeg.
  4. Grease a 9x13 inch baking dish, layer half of the Gruyère cheese, then the leeks and toasted bread. Pour the custard over, pressing gently. Top with remaining Gruyère cheese.
  5. Bake in preheated 350°F oven for about 1.5 hours, checking after 1 hour. Cover with foil if browning too fast.
  6. Allow to rest for at least 10 minutes before slicing and serving.
