Preparation and Cooking Steps
- Begin by cleaning and slicing the leeks; soak them to remove grit, using only the white and light green parts. In a skillet, melt butter and oil over medium heat, add leeks, salt, and pepper, and sauté until tender.
- Cut the bread into 1-inch cubes and toast in the oven at 350°F for about 20 minutes until golden brown.
- In a bowl, whisk together eggs, milk, half-and-half, and Dijon mustard until smooth. Season with salt, pepper, chives, thyme, and nutmeg.
- Grease a 9x13 inch baking dish, layer half of the Gruyère cheese, then the leeks and toasted bread. Pour the custard over, pressing gently. Top with remaining Gruyère cheese.
- Bake in preheated 350°F oven for about 1.5 hours, checking after 1 hour. Cover with foil if browning too fast.
- Allow to rest for at least 10 minutes before slicing and serving.
