  • 3 large Eggs
  • 1 cup Almond Flour can be swapped with rolled oats
  • 1/4 cup Honey or Maple Syrup or a sugar-free sweetener like monk fruit
  • 1 tsp Vanilla Extract
  • 1 tsp Lemon Zest
  • 1 tsp Baking Powder
  • 2 cups Mixed Berries (fresh or frozen) do not thaw if using frozen

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 or 9x9-inch baking dish.
  2. In a blender, combine the strained cottage cheese and eggs; blend until smooth.
  3. Transfer the mixture to a bowl and add the almond flour, sweetener, vanilla, lemon zest, and baking powder; gently fold to combine.
  4. Carefully fold in the mixed berries.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 35-40 minutes until golden brown and a toothpick comes out clean.
  7. Allow to cool for 20-30 minutes before slicing into squares.
