  • 1 cup unsalted butter softened, can substitute with salted butter
  • 2 cups all-purpose flour can use gluten-free flour
  • 1 cup granulated sugar can substitute with brown sugar
  • 1 large egg should be at room temperature
For the Filling
  • 1 jar seedless raspberry jam can swap for blueberry or strawberry jam
For the Topping
  • 1.5 cups reserved crumb mixture from the crust mixture

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 13x9 inch pan.
  2. Mix together the unsalted butter, all-purpose flour, granulated sugar, and egg until crumbly, about 2-3 minutes.
  3. Reserve 1.5 cups of the mixture for the topping and press the rest into the bottom of the pan to form the crust.
  4. Spread the seedless raspberry jam evenly over the crust.
  5. Crumble the reserved mixture over the jam layer and gently press down.
  6. Bake for 30-40 minutes until golden brown on top. Remove from the oven and let cool completely.
  7. Once cooled, cut into squares or rectangles and serve.
