For the Casserole
  • 2 lbs Boneless, Skinless Chicken Breasts Can substitute with chicken thighs
  • 2 cups Red Enchilada Sauce Gluten-free if needed
  • 1 can Fire-Roasted Tomatoes
  • 1 can Diced Green Chiles
  • 1 packet Taco Seasoning Gluten-free if needed
  • 2 cups Shredded Mexican Cheese Blend Can substitute with Monterey Jack or sharp cheddar
  • 1 can Black Beans drained and rinsed
  • 1 cup Sweet Corn Kernels Frozen or canned
  • 6 pieces Gluten-Free Tortillas sliced
  • 8 oz Cream Cheese optional

Instructions
  1. Prepare the Slow Cooker: Spray the inside of the slow cooker with non-stick cooking spray.
  2. Layer the Chicken: Place the chicken breasts at the bottom of the slow cooker in a single layer.
  3. Add Sauces and Seasonings: Pour the enchilada sauce, tomatoes, chiles, and taco seasoning over the chicken.
  4. Cooking Time: Cover and cook on High for 3-4 hours or Low for 4-6 hours.
  5. Shred the Chicken: Once done, shred the chicken right in the slow cooker using two forks.
  6. Mix in Cheese and Beans: Stir in half of the cheese, black beans, and sweet corn.
  7. Incorporate Tortillas: Add the sliced tortillas and fold them into the mixture.
  8. Top with Cheese: Sprinkle the remaining cheese on top and cook for an additional 20-30 minutes on High.
  9. Optional Cream Cheese Addition: Stir in cream cheese just before serving for extra creaminess.
