- In a food processor or blender, add 1 cup of cottage cheese along with 2 large eggs. Mix in ¾ teaspoon of garlic powder and 1 teaspoon of Italian seasoning if desired. Blend until smooth, about 30 seconds.
- While the batter is blending, line a baking sheet with parchment paper and coat with cooking spray.
- Pour the smooth cottage cheese batter onto the prepared baking sheet and spread evenly. Shape into a rectangular or round form.
- Preheat your oven to 350°F (175°C). Finish shaping the bread and bake for 30-35 minutes until golden-brown.
