Ingredients
  

For the Chicken
  • 1 pound Chicken Breast or thigh
  • 2 tablespoons Cornstarch or arrowroot powder for gluten-free
  • 2 tablespoons Shaoxing Wine or dry sherry, switch to chicken broth for non-alcoholic
  • 1 teaspoon Salt adjust according to taste
For the Sauce
  • 2 tablespoons Oyster Sauce check for gluten-free options
  • 1 tablespoon Dark Soy Sauce or soy sauce
  • 1 teaspoon Sugar or honey/agave syrup
  • 1 cup Chicken Stock or vegetable stock for vegetarian
For the Vegetables
  • 4 cups Broccoli or bell peppers/snap peas
  • 3 cloves Garlic fresh preferred
  • 1 tablespoon Ginger fresh minced
For Cooking
  • 2 tablespoons Peanut Oil or vegetable oil

Method
 

Instructions
  1. Slice the chicken breast against the grain into thin pieces. Combine with Shaoxing wine, a pinch of salt, and cornstarch. Allow to marinate for 10 minutes.
  2. Whisk together oyster sauce, an additional splash of Shaoxing wine, dark soy sauce, chicken stock, sugar, cornstarch, and a touch of salt for the sauce.
  3. Boil an inch of water in a skillet. Add broccoli, cover, and steam for 40-50 seconds until bright green and tender-crisp.
  4. Heat peanut oil in the skillet until shimmering. Cook marinated chicken in a single layer for 2-3 minutes until slightly charred. Add garlic and ginger, cooking for another minute.
  5. Return broccoli to the skillet, pour the sauce over, and stir well to coat. Cook for about 1 minute until the sauce thickens.
