Preparation Steps
- Preheat your oven to 325°F (160°C) and prepare a loaf pan lined with parchment paper.
- Slice the Yukon Gold potatoes using a mandoline into 1/16-inch thick rounds. Soak in cold water to prevent browning.
- Layer the dried potato slices in the loaf pan, brushing each layer with clarified butter and seasoning with salt and pepper.
- Cover the top with parchment and foil, weighing down the layers with a weight.
- Bake for 1 hour and 45 minutes to 2 hours until potatoes are tender.
- Allow to cool to room temperature, then refrigerate overnight.
- Unmold and slice the Potato Pave carefully.
- Sear each slice in a hot nonstick pan with clarified butter until golden brown on both sides.
- Serve warm, optionally garnished with fresh herbs or drizzle of truffle oil.
