Method
 

Preparation Steps
  1. Preheat your oven to 325°F (160°C) and prepare a loaf pan lined with parchment paper.
  2. Slice the Yukon Gold potatoes using a mandoline into 1/16-inch thick rounds. Soak in cold water to prevent browning.
  3. Layer the dried potato slices in the loaf pan, brushing each layer with clarified butter and seasoning with salt and pepper.
  4. Cover the top with parchment and foil, weighing down the layers with a weight.
  5. Bake for 1 hour and 45 minutes to 2 hours until potatoes are tender.
  6. Allow to cool to room temperature, then refrigerate overnight.
  7. Unmold and slice the Potato Pave carefully.
  8. Sear each slice in a hot nonstick pan with clarified butter until golden brown on both sides.
  9. Serve warm, optionally garnished with fresh herbs or drizzle of truffle oil.
