For the Seafood
  • 1 cup Lobster Meat Use fresh or pre-cooked lobster.
  • 1 cup Crab Meat Opt for lump crab.
  • 1 cup Shrimp Peeled and deveined.
For the Cheese Sauce
  • 2 cups Cheddar Cheese Freshly grated.
  • 1 cup Gruyère Cheese Shredded.
  • 3 cups Milk/Cream Adjust based on desired creaminess.
  • 1/4 cup All-Purpose Flour Substitute with gluten-free flour if necessary.
  • 4 tablespoons Butter For the roux.
For Seasoning
  • Seasonings (salt, pepper, etc.) To taste.

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water. Once boiling, add the elbow macaroni and cook until al dente, about 7-8 minutes. Drain and return to pot.
  2. In a medium saucepan over medium heat, melt 4 tablespoons of butter until bubbly. Stir in 1/4 cup of flour and cook for 2 minutes, whisking continuously. Gradually whisk in 3 cups of milk or cream and let it thicken for about 5-7 minutes.
  3. Reduce heat to low and stir in 2 cups of cheddar and 1 cup of Gruyère cheese until melted. Season with salt and pepper.
  4. Fold in the cooked macaroni, 1 cup of lobster, 1 cup of crab, and 1 cup of shrimp gently.
  5. Transfer to a greased 9x13 inch baking dish and bake at 350°F (175°C) for 20-25 minutes.
  6. Allow to cool for a few minutes before serving, perhaps alongside a salad.
