- Boil a large pot of salted water. Once boiling, add the elbow macaroni and cook until al dente, about 7-8 minutes. Drain and return to pot.
- In a medium saucepan over medium heat, melt 4 tablespoons of butter until bubbly. Stir in 1/4 cup of flour and cook for 2 minutes, whisking continuously. Gradually whisk in 3 cups of milk or cream and let it thicken for about 5-7 minutes.
- Reduce heat to low and stir in 2 cups of cheddar and 1 cup of Gruyère cheese until melted. Season with salt and pepper.
- Fold in the cooked macaroni, 1 cup of lobster, 1 cup of crab, and 1 cup of shrimp gently.
- Transfer to a greased 9x13 inch baking dish and bake at 350°F (175°C) for 20-25 minutes.
- Allow to cool for a few minutes before serving, perhaps alongside a salad.
