Prepare Brownie Cheesecake Bars
- Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by lining it with parchment paper or spraying it with cooking spray.
- In a mixing bowl, prepare the brownie mix according to the package instructions. Pour the batter into the prepared dish and press half of the chopped Oreo cookies into the brownie layer.
- Bake for about 25 minutes until slightly soft and jiggles in the center. Cool for 10 minutes.
- Beat cream cheese until smooth, then blend in sugar, egg, vanilla extract, and sour cream until well combined.
- Spread the cheesecake mixture over the cooled brownie layer and bake for an additional 25-30 minutes until the edges are set.
- Cool at room temperature for 30 minutes, then refrigerate for at least 1 hour.
- Heat heavy whipping cream in a saucepan until simmering, then stir in chocolate chips until melted and smooth.
- Pour ganache over the cheesecake layer and top with remaining chopped Oreos. Press slightly to adhere.
- Return to the refrigerator and chill for an additional 2 hours, or overnight for best results.
