  • 1 cup Oreo Cookies Chopped; choose regular or flavored.
For the Cheesecake Layer
  • 8 oz Cream Cheese Use full-fat for a richer texture.
  • 1 large Egg At room temperature.
  • 1/2 cup Granulated Sugar
  • 1/2 cup Sour Cream Greek yogurt can be used as a substitute.
  • 1 tsp Vanilla Extract Opt for pure vanilla for best flavor.
For the Ganache Topping
  • 1 cup Chocolate Chips Dark, milk, or semi-sweet can be used.
  • 1/2 cup Heavy Whipping Cream

Method
 

Prepare Brownie Cheesecake Bars
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13-inch baking dish by lining it with parchment paper or spraying it with cooking spray.
  2. In a mixing bowl, prepare the brownie mix according to the package instructions. Pour the batter into the prepared dish and press half of the chopped Oreo cookies into the brownie layer.
  3. Bake for about 25 minutes until slightly soft and jiggles in the center. Cool for 10 minutes.
  4. Beat cream cheese until smooth, then blend in sugar, egg, vanilla extract, and sour cream until well combined.
  5. Spread the cheesecake mixture over the cooled brownie layer and bake for an additional 25-30 minutes until the edges are set.
  6. Cool at room temperature for 30 minutes, then refrigerate for at least 1 hour.
  7. Heat heavy whipping cream in a saucepan until simmering, then stir in chocolate chips until melted and smooth.
  8. Pour ganache over the cheesecake layer and top with remaining chopped Oreos. Press slightly to adhere.
  9. Return to the refrigerator and chill for an additional 2 hours, or overnight for best results.
