Step-by-Step Instructions for Biscoff Blondies
- Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
- Melt together 1 cup of unsalted butter and 1 cup of Biscoff cookie butter in a medium saucepan over low heat for about 5 minutes.
- Once cooled slightly, whisk in 1 cup of brown sugar until fully incorporated, about 2 minutes.
- Add 2 large eggs and 1 teaspoon of vanilla extract to the mixture, continuing to mix until smooth, about 1-2 minutes.
- In a separate bowl, mix together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt, then fold into the wet mixture until just combined.
- Fold in 1/2 cup of white chocolate chips and 1/2 cup of crushed Biscoff cookies if using, distributing evenly.
- Pour the batter into the prepared baking pan and spread it evenly in the corners.
- Bake in the preheated oven for 25-30 minutes until golden brown and a toothpick inserted comes out clean or with a few moist crumbs.
- Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice into squares and enjoy!

Notes
Store Biscoff Blondies in an airtight container with parchment between layers; this retains their moisture for days.
