Step-by-Step Instructions for Biscoff Blondies
  1. Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
  2. Melt together 1 cup of unsalted butter and 1 cup of Biscoff cookie butter in a medium saucepan over low heat for about 5 minutes.
  3. Once cooled slightly, whisk in 1 cup of brown sugar until fully incorporated, about 2 minutes.
  4. Add 2 large eggs and 1 teaspoon of vanilla extract to the mixture, continuing to mix until smooth, about 1-2 minutes.
  5. In a separate bowl, mix together 2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt, then fold into the wet mixture until just combined.
  6. Fold in 1/2 cup of white chocolate chips and 1/2 cup of crushed Biscoff cookies if using, distributing evenly.
  7. Pour the batter into the prepared baking pan and spread it evenly in the corners.
  8. Bake in the preheated oven for 25-30 minutes until golden brown and a toothpick inserted comes out clean or with a few moist crumbs.
  9. Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Slice into squares and enjoy!
