  • 2 large cucumbers sliced into thin rounds
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sriracha adjust to taste
  • 1 teaspoon sesame oil
  • 1 clove garlic minced
  • 1 tablespoon chopped fresh cilantro for garnish
  • 1 tablespoon chopped peanuts for garnish

Method
 

  1. In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sriracha, sesame oil, and minced garlic until smooth and well combined.
  2. In a large bowl, add the sliced cucumbers. Pour the spicy peanut sauce over the cucumbers and toss gently to coat all the slices evenly.
  3. Let the cucumbers marinate in the sauce for at least 15 minutes at room temperature or refrigerate for up to 1 hour for a more intense flavor.
  4. Before serving, give the cucumbers another gentle toss. Transfer to a serving dish and garnish with chopped cilantro and peanuts.
