Ingredients
  

  • 2 medium cucumbers diced
  • 2 cups cherry tomatoes halved
  • 1 ripe avocado diced
  • 1/4 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the diced cucumbers, halved cherry tomatoes, diced avocado, chopped red onion, and chopped cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
  5. Serve immediately or refrigerate for up to 30 minutes before serving for a chilled option.
