Step-by-Step Instructions
  1. In a large skillet over medium heat, add the Italian sausage. Cook for 5-7 minutes until browned and no longer pink. Drain excess fat and set aside.
  2. Transfer the browned sausage to the crockpot. Add diced tomatoes, minced garlic, Italian seasoning, and chicken broth. Stir well.
  3. Cut cream cheese into cubes and scatter over the sausage mixture without stirring.
  4. Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours.
  5. About 30 minutes before serving, add the frozen tortellini and fresh spinach. Stir to combine.
  6. Taste the mixture and adjust seasoning with salt and pepper before serving.
