  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional for heat
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the red potatoes thoroughly. Cut each potato into wedges, about 8 wedges per potato.
  3. In a large bowl, combine the olive oil, garlic powder, onion powder, paprika, oregano, salt, black pepper, and cayenne pepper (if using).
  4. Add the potato wedges to the bowl and toss until they are evenly coated with the seasoning mixture.
  5. Spread the seasoned potato wedges in a single layer on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 30-35 minutes, flipping the wedges halfway through, until they are golden brown and crispy.
  7. Remove from the oven and let them cool for a few minutes. Garnish with chopped fresh parsley before serving.
