Ingredients
  

For the Filling
  • 8 oz Feta Cheese Choose Greek or Bulgarian for best melting
  • 1 tbsp Fresh Thyme Substitute with rosemary if preferred
For the Phyllo Cups
  • 1 lb Phyllo Dough Puff pastry can be used but yields denser result
  • 4 tbsp Olive Oil For brushing on phyllo dough
For the Drizzle
  • 1/3 cup Hot Honey Maple syrup can be substituted
  • 1 tsp Red Pepper Flakes Reduce or omit for milder flavor

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C).
  2. Unroll the phyllo dough and cover with a damp cloth. Brush a sheet with olive oil and fold it into quarters, then press it into a muffin tin.
  3. Crumble the feta cheese and fill each phyllo cup just below the rim with feta.
  4. Bake the muffin tin for approximately 10 minutes or until the cups are golden brown.
  5. Remove from the oven and immediately drizzle hot honey over each cup. Optionally sprinkle red pepper flakes.
  6. Let the phyllo cups cool for a couple of minutes before enjoying warm.
