Method
 

Preparation and Cooking
  1. Freeze the bacon for about 30 minutes to firm it up for cutting. Slice into bite-sized pieces.
  2. Wash the golden potatoes thoroughly. Dice into ½-inch cubes and soak in cold water for 15 minutes.
  3. Heat olive or avocado oil in a skillet over medium-high heat. Drain the potatoes, season with salt, pepper, and Old Bay, and cook for about 10 minutes until golden brown.
  4. Stir in the bacon pieces and cook for an additional 5-6 minutes until bacon is crispy and potatoes are tender.
  5. Add minced garlic and cook for 1-2 minutes until fragrant, stirring continuously.
  6. Drizzle maple syrup over the mixture and toss to coat, cooking for another minute.
  7. Transfer to a serving dish and garnish with parsley or chives. Serve hot.
