  • 1 pound Ground Beef lean (90% or higher)
  • 1 packet Taco Seasoning homemade or store-bought
  • 1 cup Red Enchilada Sauce green enchilada sauce can be substituted
  • 1 cup Oaxaca Cheese can substitute with Mexican cheese or Monterey Jack
Taco Shells
  • 8 units Corn Tortillas can use flour tortillas, adjust baking time
  • 2 tablespoons Olive Oil or any favorite cooking oil

Method
 

Preparation Steps
  1. Preheat the oven to 450°F (232°C) to achieve a crispy texture.
  2. Cook the ground beef in a large skillet over medium-high heat for 5-7 minutes until browned.
  3. Add taco seasoning and red enchilada sauce, simmer for 2-3 minutes to combine flavors.
  4. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds to soften.
  5. Brush one side of each tortilla with olive oil and place oil-side down on a baking sheet.
  6. Sprinkle cheese on one half of each tortilla, add the beef mixture, and top with more cheese before folding.
  7. Bake in the preheated oven for 16 minutes until crispy and golden brown.
  8. Allow to cool for 3 minutes before serving with salsa or guacamole.
