- Wash and dry the baby potatoes, then slice each in half.
- Chop the bacon into small pieces.
- In a large bowl, combine potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper.
- Spread the seasoned potatoes on the baking sheet, leaving space between each.
- Sprinkle chopped bacon over the potatoes.
- Roast for 30-35 minutes, flipping halfway for even browning.
- In the last 5 minutes, drizzle honey over the potatoes and bacon.
- Remove from oven, let cool slightly, and garnish with parsley.
