- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil or butter, add minced garlic and chopped mushrooms, sauté for about 5-7 minutes.
- Add spinach and cook for 2-3 minutes until wilted.
- In a saucepan, melt butter, whisk in flour for 1-2 minutes, gradually add milk and stir until thickens; add nutmeg.
- Layer the baking dish with béchamel sauce, lasagna noodles, mushroom mixture, mozzarella, and ricotta, repeat, and finish with sauce and cheese on top.
- Cover with foil and bake for 25-30 minutes, uncover and bake for an additional 10-15 minutes until golden.
- Allow to cool for 10 minutes before slicing and serving.
