Ingredients
  

  • 8 ounces whole wheat pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup cooked chicken breast shredded
  • 1 cup spinach fresh
  • 1 cup cherry tomatoes halved
  • 1 cup low-fat cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Method
 

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shredded chicken, spinach, and cherry tomatoes to the skillet. Cook for about 3-4 minutes, stirring occasionally, until the spinach is wilted and the tomatoes are slightly softened.
  4. Reduce the heat to low and stir in the cottage cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Mix until well combined and heated through.
  5. Add the cooked pasta to the skillet and toss everything together until the pasta is evenly coated with the creamy sauce.
  6. Serve immediately, garnished with fresh basil if desired.
