Method
 

Step-by-Step Instructions
  1. In a medium saucepan or Dutch oven, melt 4 tablespoons of butter over medium heat.
  2. Add 1 small finely diced onion to the melted butter and sauté for 2-3 minutes until translucent.
  3. Stir in 1 cup of uncooked long grain white rice, along with ½ teaspoon of garlic powder and ½ teaspoon of salt.
  4. Pour in 1 ¼ cups of chicken stock and 1 ¼ cups of milk, reserving ¼ cup of milk for later.
  5. Once boiling, reduce the heat to low and let the rice simmer covered for 20 minutes.
  6. After 20 minutes, check if the rice is tender and cover for an additional 1-2 minutes as needed.
  7. Turn off the heat and stir in the reserved ¼ cup of milk, 1 tablespoon of lemon juice, and ½ cup of parmesan cheese.
  8. Fold in half of the 1 tablespoon of fresh chopped parsley and serve immediately.
