- In a medium saucepan or Dutch oven, melt 4 tablespoons of butter over medium heat.
- Add 1 small finely diced onion to the melted butter and sauté for 2-3 minutes until translucent.

- Pour in 1 ¼ cups of chicken stock and 1 ¼ cups of milk, reserving ¼ cup of milk for later.
- Once boiling, reduce the heat to low and let the rice simmer covered for 20 minutes.
- After 20 minutes, check if the rice is tender and cover for an additional 1-2 minutes as needed.
- Turn off the heat and stir in the reserved ¼ cup of milk, 1 tablespoon of lemon juice, and ½ cup of parmesan cheese.
- Fold in half of the 1 tablespoon of fresh chopped parsley and serve immediately.
