Method
 

Step-by-Step Instructions
  1. Rinse fish fillets under cold water, pat dry, cut into pieces, and season with salt and pepper.
  2. Heat oil in a large pot over medium heat, add chopped onions and sauté until translucent (about 5 minutes).
  3. Add minced garlic and grated ginger, stir, and cook for 1-2 minutes until fragrant.
  4. Incorporate diced tomatoes and chopped bell pepper, simmer for 5-7 minutes until softened.
  5. Pour in coconut milk and broth, stir, and bring to a gentle simmer.
  6. Add fish sauce, lime juice, and curry powder, adjust salt and pepper to taste.
  7. Gently place seasoned fish into the stew, simmer for about 10 minutes until cooked through.
  8. Stir in fresh spinach or kale, allowing to wilt for 2-3 minutes.
  9. Remove from heat, ladle into bowls and garnish with fresh cilantro.
  10. Serve with lime wedges on the side.
