  • 1 cup fresh spinach chopped
  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice optional
  • 1 tablespoon olive oil

Method
 

  1. Preheat your oven to 350°F. Grease a 9x13-inch baking dish with olive oil.
  2. In a large mixing bowl, combine the shredded chicken, chopped spinach, softened cream cheese, sour cream, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix until well combined. If using, fold in the cooked rice for added texture.
  3. Transfer the mixture to the prepared baking dish, spreading it evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and golden on top.
  5. Remove from the oven and let it cool for 5-10 minutes before serving.
