- In a blender, combine fresh cranberries, brown sugar, olive oil, honey, balsamic vinegar, minced garlic, orange juice, orange zest, sea salt, and black pepper. Blend until smooth.
- Place the chicken thighs in a large ziplock bag or bowl. Pour the prepared marinade over the chicken, ensuring each piece is well-coated. Marinate in the refrigerator for at least 2 hours or overnight.
- Preheat your oven to 375°F (190°C) and prepare a lightly greased 8x8-inch baking dish.
- Remove the chicken from the marinade and place it in the greased baking dish skin-side up. Pour the remaining marinade over the chicken. Bake for 25-30 minutes until fully cooked.
- Switch the oven to broil. Mix a teaspoon of honey with a teaspoon of olive oil and brush it over the chicken. Broil for 2-3 minutes.
- Remove from the oven and let the chicken rest for 10 minutes before serving. Garnish with fresh orange zest and cranberries.
