For the Salmon
  • 4 fillets Salmon Fillets skinless, boneless thick fillets
  • 1 tablespoon Olive Oil for greasing
  • to taste Sea Salt
  • to taste Black Pepper
  • 1 Lemon zested and sliced
For the Filling
  • 1 cup Lump Crabmeat fresh or canned
  • 1 cup Cooked Shrimp chopped small
  • 8 ounces Cream Cheese softened
  • 1 cup Fresh Breadcrumbs
  • 2 tablespoons Green Onions sliced
  • 1 tablespoon Fresh Dill chopped fresh
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Old Bay Seasoning or Cajun/Italian seasoning
For Baking
  • 2 tablespoons Butter melted
  • 1/2 cup White Wine for flavor
  • 1/4 cup Fresh Parsley for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C). Cut pockets into the salmon fillets and season with salt, pepper, and lemon zest. Allow to rest.
  2. In a mixing bowl, combine crabmeat, shrimp, cream cheese, breadcrumbs, green onions, dill, garlic powder, and Old Bay seasoning. Mix until well combined.
  3. Stuff the salmon pockets with the crab and shrimp mixture, securing with toothpicks if necessary.
  4. Place stuffed salmon in a greased baking dish, brush with melted butter, and bake for 18-22 minutes until cooked through.
  5. Let salmon rest for 5 minutes after baking, remove toothpicks, garnish with parsley, and serve.
