- Preheat your oven to 325°F (163°C).
- Grease a standard muffin tin or a silicone muffin tray.
- In a high-speed blender, combine eggs, cottage cheese, shredded cheese, milk, salt, black pepper, garlic powder, and onion powder until smooth.
- Pour the blended mixture into a mixing bowl and gently fold in your choice of chopped vegetables and optional cooked turkey bacon or chicken sausage.
- Divide the mixture evenly among the muffin cavities, filling each about ¾ full.
- Bake for 20–25 minutes, or until the bites are set and slightly golden.
- Allow the bites to cool in the pan for 5 minutes before removing them.
