  • 1 cup Cottage Cheese Opt for moist curds without added sugars
  • 1 cup Shredded Cheese Cheddar, mozzarella, or Swiss
  • 1/4 cup Milk Can substitute with almond or oat milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
For the Mix-ins
  • 1 cup Chopped Vegetables Bell peppers, spinach, or mushrooms
  • 1/2 cup Cooked Turkey Bacon/Chicken Sausage Optional, can be omitted or substituted

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 325°F (163°C).
  2. Grease a standard muffin tin or a silicone muffin tray.
  3. In a high-speed blender, combine eggs, cottage cheese, shredded cheese, milk, salt, black pepper, garlic powder, and onion powder until smooth.
  4. Pour the blended mixture into a mixing bowl and gently fold in your choice of chopped vegetables and optional cooked turkey bacon or chicken sausage.
  5. Divide the mixture evenly among the muffin cavities, filling each about ¾ full.
  6. Bake for 20–25 minutes, or until the bites are set and slightly golden.
  7. Allow the bites to cool in the pan for 5 minutes before removing them.
